The family comes across a ready-made food truck from Sheridan that used to sell Thai food. “We talked about it as a family and decided to buy it,” she said. “We’ve had it since May but we’ve had to put in a lot of effort to meet the rules and regulations.”
Peña says the food is “authentic Mexican,” with street tacos, burritos and quesadillas in the leading actors and the addition of tamales on weekends.
Finally, they can expand the menu to include breakfast sandwiches.

If you’re trying to recreate the carne asada experience in Sonora, there are rules to follow: Diezmillo (minced meat roll) and Palmilla or aguayón (loaf) are the traditional meats of choice. The first has a strong and chewy beef flavor, while the second has a softer flavor and a soft bite. Use this or that, or a combination. Either way, they need to be sliced 1/2 inch thick, baked at high heat, and soaked in a large amount of salt – and the only salt – as soon as they are tossed on a grill. They should only be turned over once when the gravy emerges and starts to bubbly, leave the rest of the skin on, then slice or dice them into bite-sized pieces.
